Chinese Brioche.


Chinese Brioche

INGREDIENTS:

500g flour.

80g soft butter.

50g sugar.

1tsp salt.

2 eggs.

200ml milk.

2 sachets of baker's yeast.


For the pastry cream

4 egg yolks.

500 ml of milk.

45g of cornstarch.

90g sugar.

A vanilla pod or vanilla flavorin.

METHOD:

then we will start with the pastry cream, boil the milk. 

In a bowl, beat the egg yolks with the cornstarch and sugar. 

Once the milk is boiled, the milk and mixture are combined and return to cook over low heat, whisking until the mixture becomes closed and smooth. 

Set aside to cool it.


For the brioche

In your robot or there hands, put the flour, sugar, yeast, salt, eggs and lukewarm milk little by little and knead everything. 

Then put the soft butter and beat 10 minutes. Let the dough rest for about 1 hour 30 minutes

Then roll out the dough and put the pastry cream on top (see video). 

Roll everything then make sections of about 5cm to put in your mold. 

Leave to stand for 30 minutes then brush with egg yolk and cook for 30 minutes at 180 degrees.

Once cooked, make a syrup. 

Put 100ml of water and 90g of sugar in a saucepan and let reduce. Once the syrup is done, brush your brioche with it.
