crispy bread
INGREDIENTS:
1 loaf ciabatta bread, sliced.
150g-200g Iberian, serrano or parma ham, chopped.
200g ricotta (requesón or mató).
Zest of 1 lemon.
Salt.
Black pepper.
Thyme (optional, to decorate).

METHOD :
1. Preheat the oven to 200C.
Place the slices of bread on a baking tray and bake for 15min or until toasted.
2. In the meantime make the ricotta cream. Blend together the ricotta with half of the lemon zest, some salt and black pepper until creamy.
3. Spread some cream on each toast, add some ham, sprinkle the remaining lemon zest and decorate with some thyme.
