A light layered dessert with crushed cookies, strawberry coulis, and mascarpone whipped cream.
Serves 4.
Preparation time: 15 minutes.
Ingredients
- 250 g strawberries
- 200 g mascarpone
- 100 g natural yogurt
- 150 g whipped cream
- 1 tablespoon vanilla extract
- 100 g powdered sugar
Preparation
Prepare the strawberry coulis
- Crush the cookies with a rolling pin, pestle, or food processor. Hull the strawberries and cut them into medium-sized pieces.
- Set aside a few strawberries for the final touch. In a saucepan with 5 cl of water over medium heat, add the strawberries and 50 g sugar, and mix well.
Prepare the mascarpone cream
- Remove the pan from the heat and let it cool slightly.
- Mix the mascarpone, vanilla extract, and natural yogurt with the remaining sugar. Whip the cream and fold it into the mixture.
Assemble the dessert cups
- Arrange 1 to 2 spoonfuls, according to your preference, of the crushed cookies in the glasses. Add a layer of strawberry coulis and the mascarpone-and-whipped-cream mixture.
- Repeat the layers and garnish with a few strawberries. Let the dessert rest in the refrigerator before serving.
Enjoy!
