3 Milk Cake

I share today's recipe.

Good morning family!!



▪︎For the cake:

- 300g of wheat flour

- 200g of standard sugar

- 5 eggs

- 180ml. Milk

- 10ml. vanilla essence

- 5g baking powder

To bake the cake:

- 1 round mold of 24 cm.

- Vegetable shortening and flour to grease and sprinkle the mould.

 For the 3 Milks:

- 250 ml. Milk

- 250 ml. of condensed milk

- 250 ml. of evaporated milk

- 15ml. Vanilla (1 tablespoon)

 For the bitumen:

- option 1 • 500 ml. Vanilla flavored whipped cream.

- option 2 • 500 ml. of whipping cream. (Beat together with 80g. of icing sugar and 30ml. of vanilla (2 tablespoons)

▪︎Vanilla Cake:

1• Preheat your oven to 180 °C.

2• Separate the whites from the yolks. The whites must be free of traces of yolk.

3• Add the egg whites to the bowl of your stand mixer and beat the egg whites on high speed for 2 minutes, until slightly fluffy.

4• Add the sugar little by little, in the form of rain while continuing to beat at high speed. Once finished add all the sugar. Continue beating for 2 more minutes until the whites are well whipped and the mixture rises to form soft peaks.

5• In a bowl add the egg yolks and vanilla. With a fork stir lightly to integrate. Add the yolks to the whipped whites. With a miserable/silicone spatula integrate the yolks to the whites in an enveloping way. Do it slowly so as not to lower the whipped whites.

6• Once the mixture has been completely integrated, add the milk and continue beating until integrated, in an enveloping way so as not to lose the mixture.

7• Add the flour together with the baking powder passed through a sieve to avoid lumps. Continue beating in an enveloping way until the mixture is integrated and there are no loose traces of flour. Reserve.

8• Grease the inside of your baking pan with a little vegetable shortening. Make sure the bottom and walls are well greased. Add a little flour and lightly tap while turning the mold until the entire interior of the mold is well covered with flour. Remove any excess flour that remains.

9• Pour the cake mixture that you prepared previously into your mould. Put in the oven and bake at 180 ° C for 50 to 55 minutes. Until sticking a wooden toothpick in and it comes out clean.

10• Take your cake out of the oven, let cool for 10 minutes before unmolding. Unmold and place on a rack until the cake cools completely.

▪︎ For the 3 milk syrup.

1 • Add the 3 milks and vanilla to a pitcher. Stir well to integrate these ingredients.

2 • With a knife or toothpick. Chop the cake all over its surface.

3 • With a brush, begin to bathe the sponge cake on top with the 3 milk syrup. Until the cake does not admit more. Store 4 • in the refrigerator overnight.

5• Beat the bitumen or whipped cream until it is firm and forms soft peaks.

6 • Take the cake out of the fridge and cover with the bitumen.
