Baked stuffed beef.

Baked stuffed beef is a popular dish in many different countries. It is made with beef and vegetables cooked in one pot. Mix vegetables with meat and other ingredients, form a kind of filling, and then bake in the oven.

Ingredients:

1 beef steak, weighing 500 grams

150gm of beef bacon or pancetta

150 grams of beef slices

6 dried apricots, 12 plums and 30 gm pine nuts

800 grams of potatoes

250 gm leeks or onions

2 or 3 carrots

250 gm cherry tomatoes

150 ml of wine or brandy

Extra virgin olive oil

Salt and ground black pepper

METHOD:

Clean the sirloin from the fat, I did not remove all of it, only the fat that stands out. Now you have to open the sirloin, although it is best to ask the butcher to do it for you. Make a first cut without going all the way through. Then you have to flip it over and keep slicing to open up the entire sirloin all the way through. Watch the video to make it easier.


Cover the sirloin with slices of beef bacon, then add a few slices of beef. I added two layers of beef because it's too thin. Cut the dried apricots and peaches in half and arrange them in rows to your liking. Then distribute the pine nuts on the face.


3.- Carefully roll the sirloin and tie it up. Watch the video to see how easy it is to hook it up. Bend the ends inward and close tightly with a knot. Once bound, season with salt and pepper to taste.


Place sirloin in a skillet with extra virgin olive oil, turning on all sides. To do this, you will have to turn it over and turn it. Once you have marked all the surface, mark the ends. Remove from heat.


Peel the carrots and cut them into slices. Peel the onions and potatoes and leave them whole. Drizzle olive oil on a baking tray and place the stuffed sirloin on top, the potatoes, shallots, and carrots, and finally add the cherry tomatoes to taste. Add salt and pour in the brandy or wine and oil from the pan where you marked the meat.


6.- Place the tray in the preheated oven at 250 degrees, heating up and down. Reduce the temperature to 225 degrees, and open the oven from time to time to see how it works. In an hour or so, the potatoes are almost ready, so go water the round with its own juice. If you see it drying out, add water or wine. In total, I put it in the oven for an hour and a quarter.


7.- When the sirloin has cooled, remove the floss by cutting it with scissors. Be careful not to break the meat. If you cut it cold, it will be easier and you can make thinner slices.
