Inverted pineapple cake
Start Christmas off right with our delicious Inverted Pineapple Cake! But this isn't just a cake, it's the best of both worlds and very easy to make. The cake is made inside out, icing on top and decorated to look like a pineapple!
INGREDIENTS
Preheat the oven to 200 degrees and lower to 180 degrees once the cake is set.
1 1/2 cups flour
1 1/2 sticks of butter
One-third of mascapado sugar
3/4 brown sugar
2 eggs
1/3 cup milk
1/3 cup syrup
4 slices of pineapple in syrup
To taste the cherries
1 1/2 teaspoons baking powder
1 1/2 tablespoons vanilla extract

method:
We start by buttering the mold we are going to use only and once it is fully lubricated we keep it.
Melt half a piece of butter in a frying pan, and once it is completely melted, add a third of a cup of powdered sugar, stir for half a minute, and then remove from the heat.
Then add it to the mold and spread it all over the base.
There we put pineapple and cherry slices, the quantity suits your taste, and once we prepare it we save it while preparing the cake mixture.
On the other hand, in a large bowl add 1 pcs of melted butter and 3/4 cup of sugar, whisking for 1 minute.
Then add the two eggs, milk, syrup and vanilla extract and continue to beat for another minute.
In the same bowl, add the flour and the previously sifted baking powder and continue to whisk until completely combined. (don't win too much)
Once the mixture is ready add it to the mold directly in the middle and spread it evenly, move the mold slightly if there are bubbles inside and now bake at 180 degrees between 40 to 50 minutes.
Mine took 45 minutes but this will depend on each oven because we take it out of the oven and let it rest for 5 to 10 minutes.
After this time, we pass a small trowel or knife around the edges of the cake to remove it from the mold.
Then we put a plate or tray on top of the mold and in one movement we flip the mold.
Lift the mold and see how beautiful and delicious it is.
