3 skinless chicken leg fillets

½ kilo of boneless sirloin.

3 chorizo ​​sausage, sliced

3 black pudding, sliced

4 tablespoons of tomato paste

1 small onion cut into cubes

2 tablespoons of crushed garlic

1 cup peas

1 medium sized corn, peeled

1 large bell pepper, cut into julienne slices

8 cups chicken broth

1 cup of lager beer

3 cups long grain rice

1 sachet of saffron

2 bay leaves

½ teaspoon dried thyme

olive oil as needed

Cut chicken and pork slices into pieces and season with salt and pepper. Put a paella pan or a large frying pan on the stove, heat a little olive oil and brown the meat. Then add the chorizos and morcellas, mix and let them brown for a few minutes until the flavors blend.

Remove all meat and in the same oil sauté garlic and onion until transparent, then add corn and onion until they change color until translucent, add tomato paste and fry for a few more minutes.

Add the rice and saffron and mix them well until they absorb the sauce and fry for two minutes, stirring constantly so that it does not stick. Add the beer and let it evaporate for a minute.

Add broth, peas, bay leaves, and oregano, and season with salt and pepper to taste. Stir the mixture, put the meat on top, cover the pot and bring it to a boil. At this moment, reduce the heat to a minimum and let it cook for 20 minutes, constantly making sure that the broth does not dry out completely, if this happens, add a little broth until ready.

As soon as the rice is cooked, remove the bay leaves, put the pepper on top and turn off the heat. Cover the pan and let it rest for 10 minutes before serving.
